Cucumbers may not look very pretty but they are rather fabulous- cool tasting and really good for you.  If you don’t believe me, here is a short list of the impressive health benefits of cucumbers:

  • They keep you hydrated. If you are not a big fan of drinking water, munch on cool cucumber, which is 96 percent water.
  • Reducing heat, both inside and out. Eat cucumber, and your  body gets relief from heartburn. Apply cucumber on your skin, and you get relief  from sunburn.
  • Flushing out toxins. All that water in cucumber helps to  remove waste products from your system.
  • Providing vitamins. A B and C, which boost  immunity, give you energy, and keep you radiant.
  • Helping weight loss. Enjoy cucumbers in your salads and  soups.
  • Reviving the eyes. Placing chilled slices of cucumber on the eyes helps reduce under-eye bags and  puffiness.
  • Keeping hair and nails healthy. Silica, the wonder mineral in  cucumber makes your hair and nails stronger and shinier.

One great way to consume cucumbers is in Tzatziki.  This is a fresh and delicious dip that really is quite healthy compare to other dips.  The trick is to take out the cucumber seeds before adding to the yoghurt as they make it too wet.  Some people like to salt the cucumber too as this helps to remove more moisture.  I prefer not to do this as reckon that we get more than enough salt from other foods and it should be added with caution.

To make it- all you need is cucumber, yoghurt (Mine was quite runny but the thicker the better), fresh mint, salt and pepper to season.

Simply slice the cucumber vertically, remove the seeds, chop or grate the cucumber, add to the yoghurt, stir in fresh chopped mint and season to taste- it really is that easy
