I have made many varieties of cheesecake in my day but never a pineapple one but I really thought it would work and so gave it a go. It was a bit hit and miss as I had no idea how much pineapple to add but it really paid off as it was delicious and will definitely be made again
if you want to make it, here’s what you will need…
Ingredients:
- 12 chocolate digestive biscuits (crushed)
- 75g melted butter
- 1 tablespoon runny honey
- For the filling
- 200g Philadephia cream cheese
- 1 carton double cream
- 175g caster sugar
- Fresh pineapple (peeled, cored and sliced- you will need about 4 slices, reserve one for decorating along with the leafy top of the pineapple and finely chop the rest)
- A chocolate flake (crumbled)
Instructions:
- Mix together the crushed biscuits, melted butter and runny honey
- Press into the base of a flan dish and chill in the fridge
- Beat together the cream cheese and caster sugar until smooth and creamy
- Beat in the cream until the mixture thickens
- prepare the pineapple and stir into the mix
Pour over the crushed biscuit base and chill until the mixture is firm
- Top with the final piece of pineapple and the leafy top and sprinkle over the flake
- Serve and enjoy!
