Really fancied something tasty after a hard day’s work so made this chicken and chick pea curry and served it with brown rice
I fried an onion and yellow pepper in a tiny amount of oil and added chopped chicken breast. I stirred in a table spoon of Madras curry paste (I used Pataks) and fried the chicken until sealed (white all over). I stirred in 2 tablespoons of medium curry powder and a tin of plum tomatoes and 1 of drained chickpeas
I let this simmer for 30 minutes and just before serving stirred in a tablespoon of mango chutney (I used Geetas which is particularly tasty) and 2 tablespoons of low fat creme fraiche. Perfect food for a cold and windy night
