* 2 large lemons
* 4 large egg yolks
* 100g caster sugar
* 50g butter cut into cubes
* Place all the ingredients in a heat proof bowl over a pan of simmering water
* Stir continuously for around 10 -15 minutes, the butter will melt and the mixture will thicken. It should coat the back of a spoon when it is ready. it will continue to thicken in the jar
* Pour into.a sterilised jar and keep in the fridge
