Lemon Meringue Roulade

A delcious recipe for a zesty lemon meringue roulade, made with lemon curd. Super tasty and easty to make too. Definitely worth a try


This lemon meringue roulade is super easy to make and is a lovely alternative to the traditional fruit version. The lemon adds a fabulous zesty tangPavlova has always been a family favourite dessert and my mum taught me how to make the best chocolate version. This lemon roulade one is perfect, if you just fancy a change!

  • 4 egg whites
  • 225g castor sugar
  • 1/2 teaspoon vanilla essence
  • 1 teaspoon white vinegar
  • 2 teaspoons cornflour
  • 300 mls double cream
  • Lemon curd

 

  • Grease and line a baking tray with parchment paper
  • Whisk the egg whites until stiff 
  • Whisk in the sugar, a spoonful at a time
  • Fold in the vinegar, vanilla essence & cornflour
  • Cook at 150C for 20 minutes
  • Cool and turn out onto parchment paper
  • Whisk the cream and swirl a spoonful of lemon curd through it
  • Spread over the meringue and drizzle over some more lemon curd
  • Roll the roulade, using the parchment paper to guide it
  • Drizzle a bit more lemon curd over the top and decorate with fruit
