Delicious Individual Crunchie cheesecakes

If you like cheesecake you will love these individual Crunchie versions. Easy to make and delicious tasting too- perfect for a dinner party or special occasion. Here is the recipe and instructions for how to make them.


I love cheesecake.  It has to be one of my favourite puddings. Best of all, you can try out different flavour combinations with no end to the possibilities!  One of my most popular cheesecake flavours is this Crunchie one.  

Crunchies in a cheesecake?  Whats not to like?  I used individual moulds to shape them but tin cans with both ends removed would work just as well.  Alternatively you can just use a flan dish or spring form tin and make one normal sized cheesecake.  

These are really easy to make and are always popular with guests especially when served with fresh berries as a nod to health!

 

2 normal Crunchie bars ( or 4 smaller multipack bars)  You can use more if you like but they are very sweet so use caution
250g crushed chocolate digestive biscuits (or your biscuits of choice)
100g butter (melted)
180g pack of cream cheese
75g Icing sugar
250mls whipping cream

  • Add the melted butter to the crushed biscuits and mix well
  • Press into greased tins (or springform cake tin) and chill in the fridge
  • Whip the cream and set to one side
  • Whisk the cream cheese and sugar together until smooth
  • Add in the whipped cream mixing until it is all combined
  • Set aside half of the crushed crunchies and stir the rest through the cream & cheese mixture
  • Pour the mixture over the bases (or base) and chill in the fridge until set (at least a couple of hours or ideally overnight)
  • Remove from the tins (or tin) and top with the remaining half of the crushed crunchies
  • Serve & enjoy

  • 1 packet chocolate hob nobs
  • 100g butter
  • 1 tbsp runny honey
  • multipack of 4 crunchies
  • 1 carton Philadelphia
  • 250ml carton of whipping or double cream
  • 100g caster sugar
