Its that time of year when all we seem to do is entertain or be entertained!

I was invited to a festive social gathering and was asked to bring a plate of canapes as my contribution to the evening.  I LOVE canapes!  So much variety, bite size mouthfuls of tasty offerings and fun!

So- what to make???  I decided on a mini version of a tricolore salad, which is one of my favourites.  I really love the combination of flavours and textures.  While a  traditional tricolore uses avocado along with beef tomatoes, basil and mozzarella, this uses little portions of the ingredients and omits the avocado.  Technically, tricolore means 3 colours so it still works.   It really is delicious!

To make these canapes you will need the following:

Buffalo mozzarella cheese

cherry tomatoes

basil leaves

Extra virgin olive oil

balsamic cineger

ground black pepper

Cocktail sticks (split in 2)

Instructions

Split the cherry tomatoes in half

cut the mozzarella cheese into small bite size pieces

Tear each basil leaf into 3 or 4 pieces

Assemble the various elements onto the half cocktail sticks- half tomato, piece of basil, piece of mozzarella, piece of basil and half tomato

Mix 2 parts balsamic vinegar with 1 part olive oil in a bowl

fill a ramekin with the oil/ vinegar mix and surround with the dressed cocktail sticks

grind a little black pepper over the canapes

Dress to impress and prepare to mingle!!!!!
