My Mum's recipe for carrot cake

Or so I thought!!  Instead of a much loved family recipe passed down the denerations, my Mum confessed that she had got this recipe from the Daily Mail’s recipe card collection- what a cheat!  It was lovely all the same

Here’s the recipe

8oz selfraising flour

2 level tsp baking powder

5oz light muscovado sugar

2oz chopped walnuts

4oz grated carrots

2 ripe bananas (mashed)

2 large eggs

5 fl oz sunflour oil

 

Topping

6oz full fat soft cheese

2oz softened butter

4oz sifted icing sugar

A few drops of vanilla extract

Walnut halves to decorate

 

Heat the oven to 180 degrees C

Grease a 20cm deep round cake tin and line the base with parchment paper Add all the cake ingredients to a. Bowl and mix until smooth Add to the bajking tin and smooth Bake for 50-60 minute until well risen and coming away from the side of the tin Turn out and cool on a wire tray

 

Topping

Add all the ingredients except the walnuts into a food processor and blitz until smooth Spread over the cake and decorate with the walnuts

Chill the cake
