Pickled Pink Onions

These pink pickled onions are perfect for sandwiches, salads, garnishes or simply for snacking on. Easy to make and delicious too!


I love pickled onions, always have done but these pink ones are just perfect.  Milder and sweeter, they simply go with everything.

Once you have made them, you need to leave them for a minimum of two hours, but the longer you leave them, the better the taste.  Bear in mind that this is a quick pickle so they will last for few weeks in the fridge.

Everything you need to make them is detailed below.

  • Pink or red onions
  • 250 mls apple cider vinegar 
  • 2 tbsps caster sugar
  • 1 tbsp sea salt flakes
  • 1/4 tsp black peppercorns
  • 1/4 tsp mustard seeds
  • 1 cinnamon stick (optional)
  • Juice of a lime

 

 

  • Place the vinegar, salt, peppercorns,  mustard seeds and cinnamon stick in a pan and bring to a simmer
  • Add the lime juice
  • Peel and finely slice the onions
  • Place the onions in a  sterilised jar or jars
  • Cover with the pickling liquid and seal
  • Set aside for a minimum of a couple of hours but preferably at least overnight
