I red onion

2 chicken fillets (trimmed and cut into goujons)

1/2 pint low salt chicken stock

1 tsp chilli flakes, cumin, cinnamon, ground coriander, ground cumin and oregano

4 tbsp low fat yoghurt

dry fry the onion adding a little water if it sticks.  Add the chicken and stir until browned all over

add the spice and stock

simmer for around 30- 40 minutes.  The chicken should be really tender and the onions broken down into the sauce

add the yoghurt to create a creamy sauce.  You may need more depending on how spicy you like your food

    • Surely the later you put the chillis in, the hoettr they’ll be? If they don’t get a chance to fry, they’ll be a lot hoettr, trust me!For tasty meals from random leftover ingredients, I can thoroughly recommend Leith’s Vegetarian Bible. Last night, I found myself with half a carrot, half an onion, the heels of a sliced loaf, half a punnet of mushrooms and some celery. Add in from the store cupboard some brown lentils, dried porcini, pine nuts and pumpkin seeds, and I had the makings of a really tasty bake with a breadcrumb crust. Admittedly, having a well stocked store cupboard helps
