Anybody else love Jamaica Ginger Cake? Here is a recipe and instructions to make it at home. Serve it sliced with a bit of butter- delicious!
Traditional Jamaica ginger cake was always one of my childhood favourites. Mu mum used to buy it as a teatime treat and we loved it served with butter on top, perfect with a cup of tea.
I have been researching lots of dark ginger cakes and combined some of my favourites to create this and was delighted with the results. One watch out is that black treacle is a nightmare to measure out. Top tip is to run the spoon under boiling water before dipping into the treacle and it will glide off the spoon- simple!
If you want to give this a go- the recipe and instructions are below
Ingredients
- 75g butter
- 80g muscavado sugar
- 75g black treacle
- 75g honey
- 3 tablespoons of milk
- 1/2 tsp bicarbonate of soda
- 175g plain flour
- 1 rounded tbsp ground ginger
- 1 tbsp ground cinnamon
- 1 level tsp grated nutmeg
- 1 egg
