This time of year, I always have a little panic about last minute gifts!  Who knows who might call to the door bearing a little present when I have nothing to give in return!  This home made shortbread is perfect.  It’s easy to make, can be packaged into a pretty little gift and best of all, it tastes lovely so will never be wasted!

If you want to make it- here is what you will need:
Ingredients for shortbread

  • 225g butter
  • 100g caster sugar (with extra for sprinkling)
  • 300g plain flour
  • 1/4 tsp baking powder
  • 1/4 tsp table salt

 

Instructions

  • Preheat the oven to 175C
  • Beat together the butter and sugar until light and fluffy
  • mix together the flour, baking powder and salt and add to the butter and sugar, combining the mix

  • Wrap the dough in cling film and chill in the fridge

  • Flour a work surface and roll the dough
  • Use a cutter to cut into shapes

  • Place on ungreased baking trays and place in the oven
  • Bake for 12-15 minutes

Remove and place on a cooling tray
