More and more people keep telling me that they are avoiding bread, wheat, gluten etc and it does make me question how much bread and wheat based products we put into our systems. I’ve nothing against bread but I do find myself looking for alternative options to try. Regular readers will know that I am a big fan of the humble chick pea and so have been desperate to have a go at making this chick pea flour bread.
I was a bit anxious that it would taste very odd but I was delighted with the results. My original plan was to serve it with home made houmous but I decided that that would be a chick pea too far (even for me!)
I opted for a freshly made guacamole which was a perfect accompaniment. you can find the recipe for guacamole here
If you want to give this bread a go- here’s what you will need:
- 125g chickpea or gram flour
- Juice of 1 lemon
- 300 mls water
- 2 tbsps olive oil, plus some extra to grease the pan
- 1/2 teaspoon sea salt
Instructions
- place the chickpea/ gram flour in a bowl.
- Add the lemon juice and water
- Cover the bowl, and allow it to rest at room temperature at least 12 and up to 24 hours.
- whisk in the olive oil and salt to make a batter
- pour some oil into 2 deep baking trays and place in the oven to heat. If you only have one tray, just repeat the process
- Pour the batter into the trays and place in hot oven
- Turn on the grill section and the bread will cook from the heat of the oven and brown on top with the heat of the grill
- Leave it for 7-10 minutes until coming away at the edges, crisping and browning on top
- Remove from the pan and scatter a little sea salt over it
- Cut into squares and serve
