I know I have said it before but I love soup. There are just so many combinations that you can never get bored! This is a very simple soup that is a good way of using up leftover roasted vegetables. It doesn’t matter what vegetables you have (I had roasted parsnips, sweet potatos and red onions)
Its really easy to make. All you have to do is add the roasted vegetables to a pot of chicken or vegetable stock and add 1 cup of red lentils. simmer until the lentils are soft and fully cooked then blend until smooth. Season and add water to make it the desired consistency
It tastes surprisingly good!
