I cooked this smoked haddock in a tomato and chilli sauce and served wiith mixed vegetables. I don’t eat nearly enough fish but smoked haddock I can cope with as it really isnt too fishy
2 smoked haddock fillets
Small tin of tomatoes
1 finely chopped shallot
2 tablespoons frozen peas
2 spring onions
1/2 teaspoon chilli flakes
2 tablespoons low fat creme fraiche
Place the haddock fillets in a baking dish
Mix all the other ingredients in a pan and simmer
Pour over the fish and bake for 30 minutes
Serve with fresh vegetables
