1 Butternut squash
1 onion chopped
1 tin tomatos
8 mushrooms sliced
¼ teaspoon chilli
4 oz mature cheddar cheese- grated
Half the squash length wise and remove seeds
Bake in the oven cut side up for 30- 40 mins or until soft
Fry the onion , mushrooms and bacon
Add the tomatos, peas and seasoning
Simmer to reduce
Spoon over the 2 baked squash halves
Sprinkle over the grated cheese
Pop under hot grill until cheese is golden and bubbling
