This was a bit of an experiment. Stuffed roasted pepper with salad
1 red pepper
Diced cooked chicken
Small tin tomatoes
Half clove garlic
Pinch of chilli flakes
Generous dash of soy sauce
Ground black pepper to season
Halve the pepper and remove stalk and seeds
Roast until soft and skin starts to colour
Meanwhile fry the onions until soft, golden and starting to caramelise
Add all other ingredients and simmer
Spoon mixture into pepper shells and serve
