Ultimate cauliflower rice

Cauliflower rice is an excellent light alternative to rice but it can be very bland. This is a lovely flavoursome version with a great combination of tastes and textures!


I love cauliflower rice but it can be very bland.  I like to perk it up with lots of flavours and textures to make it more interesting.

I have tweaked this a lot and love this version. It may be healthy but it tastes really indulgent.  I eat it regularly and much prefer it to real rice!

 

I have used frozen edamame beans but it you can’t get them, frozen peas work well too!

The beauty of this recipe is that you can used up leftovers or add any of your favourite ingredients to make it work for you!

  • 1 small cauliflower (grated or blitzed in food processor until rice sized)
  • 2 tbsps sesame oil
  • 1 shallot (finely chopped)
  • 1 carrot (peeled and grated)
  • 2-3 tbsps soy sauce
  • 2 cm piece of fresh ginger (peeled & grated)
  • 1 clove of garlic (grated)
  • 1 pinch of chilli flakes
  • 2 spring onions (finely sliced)
  • 25g frozen or fresh edamame beans (peas will do)
  • Juice of 1/2 a lime
  • ½ tsp sesame seeds

 

  • Heat the oil and fry the shallot, garlic, ginger and chilli until soft
  • Add all the other ingredients (except for the sesame seeds and lime juice) and heat through well
  • Add the lime juice & sprinkle the sesame seeds over before serving
