Ramekins & Wine in the Merchant Hotel

I was invited to attend “Ramekins at the Merchant” and will admit I was intrigued.  Ramekins of food from Ramekins and wine, partnered with a selection of wines from JN Wine?  Whats not to like?


Jamie & Thea started Ramekins & Wine, to spread the joy that they get from food and wine, and specifically how they go together. Jamie has worked in the wine trade for 10 years and was also a Masterchef Semi-finalist in 2017.  Together they partnered with local wine experts JN Wine, to host a wine and food pairing supper club in the Merchant Hotel.  Belfast.  The main concept of Ramekins & Wine is that each dish must suit a ramekin, and they must be edible with a teaspoon.

The event consisted of a  7 course dinner, served in their trademark ramekins and paired with 7 of JN Wine’s best offerings, chosen specifically for the way they go with the food. Jamie introduced each course and Jane from JN Wine explained the wine pairing.

Surprising the Tuna- sesame cured tuna, toasted macadamia & lime

A Sweet Little Pea Garden- summer green salad, chèvre, pea & herb veloute

Paired with Macchialupa Falanghina 2017, Italy

Sicilian Lobster’s Friends- Fish soup risotto, lobster & parmesan espuma

Paired with Rustenberg Chardonnay 2018, South Africa

The Second Spanish Hen- Chicken, peppers, almond, anchovy

Paired with Cline Cellars Lodi Zindfandel 2016, California

A Wild Duck Nested- Wild Duck & Blackberry bon bon, burnt onion, beetroot

Paired with Les Dissidents Le Paris 2018, France

Return of The Lemons- Potted lemon tart, Italian Meringue, semolina shortbread

Paired with Familia Martinez Finca Antigua Moscatel 2018, Spain

Campfire Cookies- Warm chocolate chip cookie, malt loaf & pistachio ice cream

Paired with Andrew Quady Starboard Batch 88 NV California
