Having made my home made  mango chutney, I am always looking for new recipes to use it in.  This mango chicken is just the thing.  It is really easy to make and pretty tasty too.   This is a firm favourite recipe of my lifelong friend Gillian who has served it to me on numerous occasions.  This version, however was served to me by my sister Diane and features fresh mango along with the chutney.  The fresh mango is a lovely addition and adds a different texture and taste to the chicken and chutney.

I have to say that Mango is one of my favourite fruits and I have fond memories of picking them in Zimbawe

To make Mango chicken, you will need the following:

4 chicken breasts (chopped)

1 jar mango chutney

1 carton single cream

1 fresh mango (peeled and chopped)

All you have to do is lay the chicken pieces in an oven proof dish

top with the chopped mango

mix together the mango chutney and cream in a jug

pour over the chicken and mango

bake in a pre heated (200C) oven for 45 minutes

Serve with rice and enjoy
