A delicious white chocolate & lemon drizzle cake

I made this lovely white chocolate and lemon drizzle cake for brunch with some friends. I'm really rather delighted with the result!

This is a delicious recipe for a light but indulgent cake.  I wasn’t sure that the white chocolate would be a good addition but the experiment paid off as it just works perfectly.  It really is delicious and perfect for any occasion

225g butter
225g castor sugar
225g self raising flour
4 eggs

Zest of 1 lemon

75 g white chocolate buttons


For the drizzle

Juice of a lemon
85g castor sugar

75 g white chocolate buttons 

Preheat the oven to 180C
Line a loaf tin with grease proof paper
Beat together the butter and sugar
Add the eggs one at a time
Fold in the flour
Add the zest

Stir in 75g chocolate buttons
Add the mixture to the loaf tin
Smooth the top
Bake for 45-50 minutes until a skewer inserted comes out clean
Mix the sugar and lemon juice to make the drizzle
Prick the cake all over
Pour over the drizzle

Allow to cool completely

melt 75 g of white chocolate buttons and drizzle over the top

Cut into slices
