A pastry making masterclass with Suzy Arbuthnot, winner of BBC’s Best Home Cook

Suzie Arbuthnot, winner of BBC's Best Home Cook 2020, shares her techniques and top tips for making shortcrust and rough puff pastry! Follow this step by step guide to make your own delicious pastry. You can then use it to make all sorts of tasty dishes. We used it to make a yummy Dijon chicken and mushroom pie.


I was a huge fan of the Best Home Cook Show and was convinced throughout that Suzie would win.  I can honestly say that I, like most of Northern Ireland, was thrilled when she did!

One of her stand out dishes for me was the pie that she made with a beautiful lattice top.  I invited her to share her pastry making skills and am delighted that she agreed.  She really is a talented cook and a delight to spend time with.  Between us, we made a rather special pie! 

I have to say, if you are trying your own pastry (and why wouldn’t you?) please be sure to brush the pie lid with beaten egg as I seem to have forgotten to film this!

Suzies pastry recipes- instructions are in the video

Shortcrust pastry

  • 250g plain white flour
  • 250g salted butter (refrigerated) – block
  • Pinch of salt from counter + table salt
  • Cold water to combine (1 bottle of cold water in fridge)

Rough puff pastry

  • 100g grated frozen salted butter (should be in freezer)
  • 200g grated frozen salted butter (should be in freezer)
  • 350g plain flour – (should be in freezer)
  • Pinch of salt
  • Freezing cold water – 8-12 tbsp depending to combine dough (should be in fridge)
  • 1 x lemon (for ½ tsp of lemon juice
