Love cookies? Why not try this recipe for Chocolate Chip Cookies? Easy to make and delicious too!

As it is biscuit night on the Great British Bake off, I thought I would share my recipe for  chocolate chip cookies with you.  Regular readers will know that I am a big fan of “everything in moderation”!  Make healthy choices but enjoy some treats too.  With that in mind, I must stress- while these are totally delicious with a moist and chewy centre, they really should be consumed with caution as they are very sweet.

Best of all, they are really easy to make which suits me just fine.  If you want to give them a go, here is what you will need

  • 225g self raising flour
  • 100g brown sugar
  • 125g  butter
  • 1 egg
  • 1 tsp vanilla essence
  • 1/2 tsp salt
  • 100g chocolate chips
  • 1/2 tsp salt

  • preheat the oven to 200C
  • mix the butter and sugar together until pale and creamy
  • add the egg and vanilla and mix well until the mixture is smooth
  • stir in the flour and salt
  • mix in the chocolate chips
  • roll into balls and place on a baking trays and flatten
  • bake in the oven for around 8 minutes until they are starting to turn golden
  • remove from the oven and put on baking trays.  They may still seem soft but thats OK
  • allow to cool and serve
