A recipe for mango granola made with Forest Feast mangoes

To celebrate the opening of the Paralympic games in Rio today, the nice folks at Forest Feast sent me some of their delicious snacks to enjoy the taste of Brazil.  I was delighted with this lovely gift and challenged myself to put them to good use.  First things first though- before taking on any challenge, always have a nice cup of tea, perfect to drink with those yummy yoghurt covered cranberries- oops!  Having demolished the first of my gifts I returned to my challenge.


I love these Forest Feast products.  Plenty of variety with fruit, nuts and seeds!

While the individual packets of acts snacks are perfect for snacking, I decided to try them as a salad topping.  This worked a treat and I was delighted with the results.  The sweet, apple infused cranberries and the crunchy almonds, pumpkin seeds and soya really brought the salad to life with extra taste and texture.  You can see a picture of the yummy salad below.

In addition, I decided to use the chopped mango to make a delicious and healthy granola.  This worked a treat and I was delighted with the results.  You can find the recipe below

Ingredients

  • 250g oat flakes
  • 100g pecans
  • 50g flax seeds
  • 50g cashew nuts or almonds
  • 3 tbsps. coconut oil
  • 4 tbsps maple syrup
  • 4tsps ground cinnamon
  • 4 X individual Forest Feast mango snacks
