These beetroot rostis are super easy to make, healthy and delicious too!

I love beetroot, it’s so good for you and can be used in lots of different ways.  I decided to try making them into rostis, and I have to say, I’m really glad that I did.  They are really yummy!

Beetroots are low in calories but pack a real punch when it comes to nutrition.  They are a great source of fibre, folate (vitamin B9), manganese, potassium, iron, and vitamin C

They also have a high concentration of nitrates, which have a blood pressure-lowering effect. This can help to reduce the risk of heart attacks, heart failure and strokes.

That’s one mighty vegetable!

  • 400g beetroot (peeled)
  • 200g carrots (peeled)
  • 2 banana shallots
  • 1 tsp nigella (black onion) seeds
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp salt
  • 2 eggs
  • 1 tsp butter
  • 1 tbsp oil

 

 

 

 

  • Grate the beetroot & carrots and place in a bowl
  • Finely chop the shallots and add to the bowl, mixing well
  • Place the mixture in a sieve and squeeze out any excess moisture
  • Return to bowl and add the spices and eggs, mixing well
  • Shape into patties, squeezing out any excess liquid
  • Melt the butter in a shallow pan and add the oil
  • Fry the rostis for around 7 minutes on each side
