Cauliflower & Gruyere soup

This cauliflower and Gruyere soup is garnished with gruyere, parsley and toasted pine nuts. Its warming and delicious, perfect for cold days and nights.


Did I mention that I love soup?  There’s just no end to the flavour combinations!  At the moment, this cauliflower & Gruyere soup is a complete favourite and makes regular appearances in Eating Ideas Towers.  The combination of the cheese and cauliflower is a complete win.
Everything you need to make them is detailed below:

• 175g Gruyere cheese and 25g for garnish
• 1 head of cauliflower (cut into florets)
• I leek (sliced)
• 1 shallot (finely chopped)
• 1 litre of vegetable stock
• 1 bay leaf
• 1 tsp Dijon mustard
• Oil for cooking 
• Salt & pepper
• 2 tbsps. pine nuts (toasted)
• 2 tbsps. chopped parsley


o Place the cauliflower & leeks on a baking tray and roast in the oven for 30 mins
o Fry the shallot in a little oil in a saucepan
o Add the stock, roasted veg, Dijon & bay leaf and stir well
o Simmer for 20 mins until the cauliflower is really soft
o Remove the bay leaf & blend until smooth
o Add the cheese and stir until melted
o Season to taste
o Mix together the toasted pine nuts, parsley and the remaining cheese and use it to garnish the soup
o Serve and enjoy
