Delicious scone based pizza

Saturday, March 28, 2020

A recipe and instructions for delicious scone based pizza. Easy to make and delicious too. Topped with passata, vegetables and cheese!

I have been having massive cravings for pizza and remembered that I used to make scone based pizzas on a regular basis.  I haven’t made one for years but decided to recreate the recipe.

I’m so glad I did as it was absolutely delicious.  I added herbs, mustard and cheese to the base and topped with courgettes, sun-dried tomatoes, spring onions and pine nuts but any toppings will work.

For the base

  • 175g self raising flour
  • 50g frozen butter (grated)
  • 1 tsp  mustard
  • 1/2 tsp salt
  • 6-8 tbsps milk (may need a little more)
  • 50g grated cheese

For the topping

  • Passata
  • your chosen toppings (I used pine nuts, asparagus, spring onions, sundried tomatoes and courgettes)
  • Grated cheese
  • Place the flour in a bowl
  • mix in the grated frozen butter to form a breadcrumb consistency
  • add the salt, herbs & mustard and mix well
  • Add the milk and stir to form a dough.  Add more milk if needed
  • Turn onto a floured surface.  Don’t knead the mixture or it will be tough
  • roll into a circle and place on a baking tray lined with baking parchment
  • top with passata
  • add your chosen toppings
  • Top with grated cheese and bake in the oven at 180C for 15 -20 minutes or until the cheese is golden and bubbling
