Easy basil & rocket pesto

I love pesto- its so versatile and perfect for using in lots of different dishes. This one is super easy to make and really tasty too!
Since going into lockdown, I have been cooking loads. What I make largely depends on what I have available in the fridge/ cupboard. Thankfully I had all the things needed to make this pesto which is one of my favourite things.
I use it in loads of ways. Its great in pasta or mixed into mayo to give it a bit of a kick.
You wont believe how easy it is to make and once you try it, you won’t go back to shop bought!
Ingredients
- 30g basil leaves
- 30g rocket leaves
- 30g toasted pine nuts
- 30g grated parmesan
- 30mls olive oil
- 1 clove garlic (finely chopped)
- pinch of salt
Instructions
- Place all the ingredients in a food processer
- Blitz to a paste
- taste and add more oil & seasoning if needed
