Easy homemade mayonnaise

A basic recipe for making homemade mayonnaise using fresh eggs, mustard and oil. So easy to make and tastes great. Give it a try!


During lockdown, it’s amazing how easy it is to run out of kitchen essentials and for me, mayonnaise is an essential!  In normal times, I would just nip out to the shop to get some, but I’m not going to shops unless it is absolutely vital. Having my own hens, I had a good supply of eggs but most people have a few rattling around in their kitchen and they are perfect for making home-made mayo.

If like me, you like making meringues or Pavlova, you will have leftover yolks and this is a great way to use them up.

  • 3 egg yolks
  • 1 tbsp Dijon mustard
  • 200 mls vegetable oil (plus extra of needed)
  • 3 tsps lemon juice
  • salt
  • Place the yolks and mustard in a food processor and blitz
  • As the processor runs, slowly add the oil a drop at a time. Add as slowly as possible to avoid the mixture splitting.  When the mixture looks stable, you can add a bit more at a time
  • Add the lemon juice and salt and season to taste
