Easy recipe for spicy cauliflower rice

I keep reading about cauliflower rice but couldn’t understand how it could possibly work. This is why I decided to give it a go. I had absolutely no expectations of success but surprisingly find myself addicted to the stuff. I previously only ever bought caulifower to make a cauliflower cheese but now find myself adding one to every shopping list! This has to be good for me- right?
It changes every time I make it as I tweak the spices to suit whatever I am serving it with. My current favourite is Thai flavourings of chilli, lime, ginger and soy sauce- totally delicious.
If you want to try making this- here is what you will need:
- Caulifower
- 2 spring onions (finely sliced)
- A little oil ( I used Vita Coco coconut oil)
- Soy sauce
- A little bit of lime zest to your taste
- Lime juice
- Chilli flakes
- A little bit of fresh grated ginger
- A food processor or grater (food processor is easier and quicker)
Instructions
- Cut the cauliflower into small florets, removing the stalks
- Place in a food processor and blitz until it is in tiny rice size pieces (don’t over blitz or it will turn into mush) If you don’t have a food processor, you can grate it
- Add one spray of oil to a frying pan and place over heat
- Add the cauliflower, spring onion, spices, lime zest and soy sauce to taste (I like lots)
- Fry until cooked
- Add a squeeze of lime juice at the end
- Serve with whatever you would normally have with rice
