French onion soup with cheesy croutons

A recipe for delicious French Onion Soup. A classic soip that's easy to make and super delicious. Definitely worth a try. Perfect with sumptuous cheesy croutons.


I love soups, all kinds of soups, there is just no end to the possibilities and it’s so good for the soul!

One of my all-time favourite soups is the classic French Onion.  I remember making it with my mum as a child and when I eat it now, it just makes me happy.  This is largely helped by the generous toasted crouton topped with cheese.

Soup and cheese on toast?  What could be more comforting?

  • 2 large brown onions
  • 25g butter 
  • 1 tsp oil
  • 1 garlic clove (peeled and finely chopped)
  • 2 tbsps. plain flour
  • 1 litre good quality stock (beef for best taste or veggie to keep it #meatfree
  • 100mls white wine (if you can spare it)
  • 1 tsp Dijon mustard
  • Circles of bread (toasted)
  • 100g grated cheese
  • Salt and pepper to taste
  • Finely slice the onions
  • Melt the butter in a pan and add the oil (this will stop the butter from burning)
  • Fry the onions & garlic slowly over a low heat until caramelised
  • Stir in the flour and cook through for a few minutes
  • Slowly add the stock, stirring constantly
  • Add the wine & mustard and season to taste
  • Place the cheese on the circles of toasted bread and grill until melted, bubbling and golden
  • Place the cheesy croutons on the soup and serve
