Hidden vegetable macaroni cheese

A sneaky way to get kids to eat more veg. Carrots, cauliflower and butternut squash are cunningly disguised in this tasty macaroni cheese dish.


This is a really easy way to make the humble macaroni cheese much more nutritious.  I cooked and puréed a mixture of veg and added them to the cheese and cream cheese to make a delicious sauce. You really won’t notice that the vegetables are there. The recipe, instructions and how- to video are below.

This video is one of a series I made for the Consumer Council for Northern Ireland as part of their “Consumer Week”.  The theme for this one was cooking for the family.

  • 350g cooked macaroni pasta
  • 250mls water
  • 300g cauliflower (cut into florets)
  • 200g butternut squash (peeled, deseeded and chopped)
  • 300g carrots (peeled and chopped)
  • 250mls milk
  • 100g cream cheese
  • 200g grated cheddar
  • 1 tsp mustard
  • Salt & pepper to season
  • Cook the veg in the water (it won’t look like enough water, but place a lid on the pot to allow it to steam)
  • Once cooked, blend the veg until smooth
  • Add the milk, cream cheese, cheese and mustard and mix until smooth
  • Add the cooked macaroni and mix to ensure that it is fully coated
  • Either serve straight away or place in a casserole dish, top with extra grated cheese and bake in the oven until the cheese is golden and bubbling and the pasta is heated through
