I really took a notion for chilli con carne tonight so made a dukan friendly one. I usually make a fine chilli but this one posed a real problem- how to make it taste good without tomatoes or beans. I reckoned that the key was to making it reall y spicy and cooking it for as long as possible so that the meat really broke down. It was delicious and a spoonful of fat free yoghurt on the side was just as good as soured cream
Heres my recipe
1 onion
500g minced steak
beef stock
1 tsp chilli flakes
1 tsp cumin powder
2 tsps oregano
1/2 tsp cayenne pepper
1/2 tsp lazy garlic
Fry the mince until brown and drain the excess fat, stir in a finely chopped onion and stir until soft
make 1/2 pint of beef stock ( a stock cube is fine)
add the spices and pour over the mince mixture, add enough water to cover the mix and simmer until nearly all absorbed
serve with a spoonful of fat free yoghurt

Jul13 Great recipe!! Chocolate is _NOT_ opiaontl, it’s a great addition. I put a fair bit of olive oil in (at least 1/4 c.?) with onions, and maybe next time would add half a jalapef1o (seeds removed).
