Indian inspired tomato pasta

I have just been introduced to the Passion Preserved range when I sampled the range at the Inns Farmers market. I am a now a big fan. I used the Indian inspired tomato preserve to make a delicious pasta sauce and was delighted with the results- Here is how i got on...
I had the pleasure of meeting Claire from Passion Preserved during a trip to the Inns Farmers market. I was fascinated by Claire’s story about how she set up the business, growing all the ingredients and developing the flavours into an amazing range of preserves. Better still, she was happy for me to sample her range before deciding on my final choices. I was astounded by just how good these taste. I have tried making a few chutneys and relishes in my time and was truly delighted by the results but these were in a different league altogether! Claire had laid out some crackers for sampling and they were plain enough to let the preserves shine, zinging with fresh vibrant flavours. I settled on the Indian inspired tomato and Hot Indian pickle flavours and was pleased with my choices
These would work on their own as a dip or with cheese and crackers but I decided to try using the indian inspired tomato preserve into a pasta sauce, pairing it with bacon, mushrooms and creme fraiche. I admit this was a bit of a gamble and I would have been gutted if it hadn’t worked out as it would have been a waste of a jar but I was totally thrilled with the results. It didn’t even need seasoning as Claire’s flavours are so robust. Keep an eye out for her passion preserved range- you won’t regret trying them!

Ingredients
- 8 slices of smoked back bacon, rind removed and chopped
- 1 Jar Passion Preserved Indian inspired tomatoes
- 1 tin chopped tomatoes
- 8-19 medium sized mushrooms, sliced
- 1 carton creme fraiche
- 350g penne pasta (allow 75g per person and a bit for luck)
- Grated cheese to serve
