- 2 large mangoes peeled an chopped into chunks
- 1 apple peeled and chopped
- 4 garlic cloves, finely chopped
- 1 red chilli finely chopped
- 1 inch long piece of ginger, finely chopped
- 1/2 teaspoon of ground turmeric
- 1/2 teaspoon cayenne pepper
- 350ml white wine vinegar
- 1 teaspoon salt
- 400 g caster sugar
- 1 star anise
Instructions
mix the chilli, garlic, ginger, cayenne and turmeric with a little bit of the white wine vinegar to make a paste
pour the vinegar into a pan, add the spice paste, salt, sugar, star anise, mangoes and apples
Bring to the boil, reduce the heat and simmer for an hour to an hour and a half until it starts to thicken
allow to cool, the mixture should thicken more when it cools
Pour into clean, steralised jars seal and cool
