I have written before about memories of picking mangoes in my friend, Christy’s house in Zimbabwe.  I remember that my job was to peel and chop them, with the juice covering nearly every part of me, while he made them into chutney.  It had never occured to me before then that people actually made this at home!
So here I am, many years later trying to recreate that magic.  Ok, so the mangoes came from Waitrose and not an African garden but the chutney tastes neaarly as good!

To make it you will need:
  • 2 large mangoes peeled an chopped into chunks
  • 1 apple peeled and chopped
  • 4 garlic cloves, finely chopped
  • 1 red chilli finely chopped
  • 1 inch long piece of ginger, finely chopped
  • 1/2 teaspoon of ground turmeric
  • 1/2 teaspoon cayenne pepper
  • 350ml white wine vinegar
  • 1 teaspoon salt
  • 400 g caster sugar
  • 1 star anise

Instructions

mix the chilli, garlic, ginger, cayenne and turmeric with a little bit of the white wine vinegar to make a paste

pour the vinegar into a pan, add the spice paste, salt, sugar, star anise, mangoes and apples

Bring to the boil, reduce the heat and simmer for an hour to an hour and a half until it starts to thicken

allow to cool, the mixture should thicken more when it cools

Pour into clean, steralised jars seal and cool
