My very good friend Molly and I came to an excellent and interesting agreement.  I would buy her a belated Christmas gift from Hollister and in return, she would help to make  video on how to make fudge!

Donning said new Hollister top, she set about her presenting duties with great gusto.  It is many years since I last made fudge and while I remember it as being extremely easy, I had forgotton that there is a fair amount of beating which is quite hard on the arms.  Although this is an excellent work out for the bingo wings, with hind sight I should have used an electric whisk.

To make the fudge you will need the following:

150 ml milk

450g Demerara sugar

115g butter

400g tin of condensed milk

1/2 teaspoon vanilla extract

Instructions:

Place all the ingredients in a saucepan

heat until the butter and sugar are melted

Bring to the boil and simmer for 10- 15 minutes (keep stirring and make sure that the mixture doesn’t stick to the bottom of the pan)

to test when the mixture is ready, drop a small amount into a glass of iced water.  it is ready if a small ball of fudge forms

Remove from the heat and beat until very thick and starting to set (this will take about 10 minutes)

Pour into a lined baking tin and leave to harden

cut into small squares (its very sweet so a little goes a long way)
