My ultimate chilli con carne

This is my go-to recipe for chilli, I've been making this for years and it never fails.


I love chilli con carne.  It really  is one of my all time favourite dishes.  It’s great with rice but my perfect serve is nachos, topped with cheese and melted in the oven  then topped with the chilli, guacamole, salsa, soured cream and jalapeño peppers- heaven!

My top tip for the best chilli con carne is to marinate the minced beef in the spices overnight.  It really does make a huge difference!

  • 500g minced beef
  • 2 tsps cumin
  • 1 tsp chilli flakes
  • 2 tsps oregano
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 clove garlic (finely chopped)
  • 1 beef stock cube
  • 1 onion (peeled and chopped)
  • 1 red pepper (chopped)
  • I courgette- chopped (optional)
  • 2 tbsps tomato puree
  • 2 tins chopped tomatoes
  • 2 tins water
  • 1 tin kidney beans
  • Place the mince in a bowl with all the spices and marinate over night
  • Fry the onion and pepper in a little oil until softened
  • Add the mince and allow it to brown
  • Add the courgette and mix well
  • stir in the tomato puree
  • Add the tomatoes, stock cube and water and bring to a simmer
  • Simmer for at least an hour before adding the kidney beans
  • Continue to simmer for a few hours (believe me the longer you cook it, the better it will be!)
  • Serve with rice or with nachos, salsa, guacamole, sour cream and jalapeño peppers
