Another scorching day- another demand for salad!

Well it seems that the good weather continues and I, for one, am not going to complain!  The bbq seems to be permanently on the go and I continue my never ending quest for interesting salads.  This version of potato salad was a bit of an experiment as I had some dill that needed to be used up.  I have to say that it worked well.  I normally use dill with smoked salmon blinis but I can now confirm that it nicely complements potatoes!

 

  • 600g baby potatoes (or  adapt quantity as required)
  • 3 tbsps. mayonnaise
  • 4 spring onions (finely chopped)
  • 2 tsps. freshly chopped dill
  • salt and pepper to taste
  • 1 tsp freshly chopped parsley to garnish

Instructions

  • Chop the potatoes into bit size pieces and boil for about 15 minutes in salted water until tender
  • Drain the potatoes and place in a bowl.  Add 1 tbsp mayonnaise and stir into the potatoes while they are still warm
  • Mix the spring onions, salt, pepper, dill and half the parsley into the remaining mayo
  • when the potatoes are cool, mix in the mayo mix and top with the remaining parsley

  1. Stella LOVES potato salad, so I’ll be sure to give this one a go as soon as the weather gets better here. It’s 10 degrees in Melbourne, and I’m missing the fabulous UK summer already. I bet you don’t hear that phrase too often!
