When making meringues, I am always left with egg yolks that usually just get binned.  I hate that sort of waste and have never been brave enough to use them to make home made mayonnaise.   I may work up to that one day!

In the meantime, these little biscuits are an easy way to use a spare yolk or simply bulk up the quantities to use more.

Try them, they are very simple but great with a nice cup of tea

ANGEL BISCUITS

 

3 oz castor sug

3oz butter

4oz flour

1 egg yolk

1/4 teasp baking soda

1/2 teasp cream of tarter

 

Cream butter and sugar.  Add egg yolk then dry ingredients.  Roll into balls size of walbut.  Place apart on baking tray in moderate oven cook until golden – about 2omins. makes approx 18
