Recipe for Red Pesto

This recipe for red pesto is simple but delicious. It's perfect for using up slow roasted or sundried tomatoes. The beauty of it is that you can add any thing you fancy!


I love pesto- it’s just so fresh and tasty.  This red pesto is a lovely alternative to the more traditional green pesto and is perfect in soups, salads and pasta.

  • 10g basil
  • 10g parsley
  • 25g pine nuts
  • 1 clove garlic (chopped)
  • 100g slow roasted or sundried tomatoes
  • 2 tbsps oil
  • pinch of sea salt
  • zest of a lemon
  • Place all the ingredients in a food processor
  • Blend together
  • Taste and adjust as needed
Serving suggestion- red pesto and courgetti spaghetti.
