I have been growing my own potatoes and am delighted with them.  I can’t begin to tell you the joy of digging up fresh spuds and cooking them for dinner.  I have been looking  for  new ways of serving potatoes and these hasselback potatoes are the best thing ever.  They are definitely the poshest way that I have ever served the humble spud!

They are a bit fiddly to prepare but they look and taste great. The best thing about them is that the slices separate as they cook, making the edges crispy and the inside really soft!  They make a great side order for any dish and are always a bit of a talking point!

The recipe and instructions are below.  Give them a try- they really are worth the extra effort!

Ingredients

  • Potatoes
  • oil
  • Ground salt and pepper
  • freshly chopped herbs
