I’m always looking for new vegetable dishes and this one is a real winner. I shall definitely be serving it on Christmas Day! The cabbage was gifted to me by my allotment guru pal, Mandy, who grows the most amazing vegetables.
- 1 red cabbage
- 2 shallots
- 2 apples
- 3 tbsps brown sugar
- 8 tablespoons balsamic vinegar
- 5 tbsps red wine
- 200mls veg stock
- chop the cabbage
- chop the apple into small pieces
- peel and finely slice the shallots
- Place all ingredients in a saucepan and simmer for around 45 minutes
