Roasted kale with parmesan and pecan nuts

A recipe and instructions for roasted kale with parmesan and pecan nuts. Easy to make and totally delicious. A perfect vegetarian side dish!


Let’s talk about KALE!  Yes, it’s green and leafy, but trust me, it’s anything BUT boring! 

Kale is a versatile superstar loaded with nutrients – from vitamins A, C, and K to antioxidants and fibre. But what makes it exciting? It’s all about how you prepare it!  This recipe is my current favourite way to serve it.  It’s just so tasty and so moreish!

  • Bag of kale, washed and stalks removed
  • 2 tbsps oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp za’atar (you can use whatever spices you fancy)
  • ½ tsp salt
  • 30g grated Parmesan
  • Handful of pecan nuts

 

  • Preheat the oven to 200C
  • Place the kale, oil, spices and half the parmesan in a bowl and massage well
  • Make sure to remove any remaining stalks
  • Spread over a lined baking tray (or trays depending on how much you have)
  • Roast for around 20 mins then sprinkle over the remaining Parmesan and add the pecans
  • Roast for another 10 mins or until crispy and golden.  Keep a careful eye on it as the pecans easily burn
  • Serve and enjoy
