My sister Diane submitted this recipe to Eating Ideas.  She was delighted to have all her children reunited under one roof and made this superb fish pie as a celebratory supper.  By my own admission, I am not the biggest fish lover but even my mouth was watering as she was making it.  Strangely enough, it was as she added a splash of white wine to the sauce that I found myself converted!- what does that tell you?

 

You can use whatever fish/seafood that you fancy but I am sharing Diane’s take on it here:

 

To make it you will need:

Salmon

Smoked haddock

Prawns

Baby potatoes (lightly crushed)

Grated cheese

25g butter

25 g flour

dash of white wine

sliced leeks

2 boiled eggs (sliced)

frozen peas and sweetcorn

 

Quantities of all of the above are flexible depending on your taste and preference

 

Cook in the fish by poaching in milk

Remove the fish and set the milk aside

Melt the butter and stir in the flour to make a roux

Add the reserved milk and white wine, stirring constantly to make a white sauce

Fry the leeks

Layer the fish, peas & corn, fried leek and boiled egg

Pour over the white sauce

Cover with the crushed potatoes

Top with grated cheese

Cook for 40mins @ 180

Serve and remember that apparently fish improves your brain power!
