Terry's Chocolate Orange mini cheesecakes- perfect for Easter!


     

I love chocolate orange and these flavours work brilliantly in a cheesecake!
I’ve been making this cheesecake flavour for years and I have to say, it never disappoints. This time, I made the base mixture with ginger biscuits which give a much warmer flavour than the usual digestive base.
I made individual cheesecakes using metal rings but it works just as well as one big one!
If you want to make it, here’s what you will need:



  • 1 Terry’s Chocolate Orange
  • 250g Ginger biscuits (crushed)
  • 100g butter (melted)
  • 180g pack of cream cheese
  • 75g Icing sugar
  • 250mls whipping cream

 

  • Add the melted butter to the biscuits and mix well
  • Press into a greased springform cake tin (or individual tins) and chill in the fridge
  • Whip the cream and set to one side
  • Whisk the cream cheese and sugar together until smooth
  • Set aside 2-3 slices of chocolate orange and melt the rest in a bowl over a pan of boiling water
  • Place the bowl in cold water and stir the melted chocolate until it has cooled
  • Add in the whipped cream mixing until it is all combined.
  • Pour the mixture over the base (or bases) and chill in the fridge until set (at least a couple of hours or ideally overnight)
  • Remove from the tin (or tins) and grate the remaining chocolate orange slices over the top
  • Serve & enjoy
