Waffleberry pudding is the ultimate comfort food

So, Im just back from a lovely break in Mexico and am really struggling to adapt back to real life.  The snow especially is a challenge as I miss my sun lounger and extensive range of tequila based cocktails!

I have decided to spend the rest of January and beginning of February on a detox plan which will be a challenge after the excesses of my Mexican holiday.

Before I start, I am delighted to report that my sister treated me to a meal of her finest roast beef with all the trimmings.  To follow, she served this waffleberry pudding which I must say was absolutely delicious and extremely moreish.  After 2 servings, I regretfully surrendered my spoon and begged for the recipe which I think she got from the BBC good food site.

To make it you need the following:

  • 2 x 240g pack of waffles
  • 150g white chocolate (chopped)
  • 600g frozen fruit e.g raspberries
  • 55g caster sugar
  • 1 tbsp plain flour
  • 500ml creme fraiche
  • eggs
  • 1/2 tsp vanilla essence
  • 2 tbsp icing sugar
  • whipped cream, ice cream or custard to serve

instructions:

  1. Preheat oven to 200C. Place half the waffles in a deep microwaveable dish and sprinkle half the chopped white chocolate and half the raspberries – repeat layers. Place in microwave on high for 3 minutes (or until raspberries have defrosted)
  2. Combine sugar and flour in a bowl. Add sour cream, eggs and vanilla essence.
  3. Whisk and spoon evenly over top of raspberries
  4. Bake 30-35 minutes or until golden brown and set in centre.
  5.  Cool for 10 minutes, sprinkle with icing sugar
  6. serve with cream, ice cream or custard.

I hope you enjoy this as much as I did!  Now for the detox plan
