A recipe for courgette based pizza

A recipe for my courgette based pizza. Easy to make and delicious too. Best of all, its carb-free & gluten free too! Whats not to like about that?


Its a little known fact that I used to work for Pizza Hut many years ago and if I am honest, I didn’t eat pizza for years after.  Its not that I don’t like it- its just that it feels really heavy and just seems so unhealthy with the doughy base. I had read about pizza made with a cauliflower base but that just seemed wrong so I thought I would try to make one using courgettes.  I wasn’t overly confident about this but was very pleasantly surprised by the results.  The finished pizza was light and tasty and when served, you honestly couldn’t tell that the base was made of courgettes. I urge you to give it a go   

I used gram (chickpea flour) to make it gluten-free, nut normal flour is ok too!

For the base

  • 2 large courgettes (grated)
  • 50g cheddar cheese (grated)
  • 75g gram (chickpea flour) You can use normal plain flour too if you prefer but you may need a little more.
  • 1 cloves garlic (finely chopped)
  • 2 tsp dried oregano
  • 1 tsp chopped fresh basil (Feel free to use whatever herbs you have to hand)
  • 2 eggs, beaten
  • 1/2 tsp salt

For the topping

  • Passata
  • Toppings of your choice
  • Grated cheese (mozzarella is ideal but I used cheddar)
  • Place the grated courgettes in a clean tea towel and squeeze out the excess moisture
  • Mix all the base ingredients in a bowl
  • Line a baking tin with greaseproof paper
  • Set the mixture on the tray and use hands to flatten it into  flat round shape
  • Bake at 180C for around 25-30 minutes or until the base has turned golden brown
  • Top the base with passatta and cover with the grated cheese
  • Add your chosen toppings (its a good idea to good them in the microwave for a minute to soften and remove any excess moisture)
  • Return to the oven and cook for around 20-30 mins until the cheese is golden and bubbling
  • Serve and enjoy
